The Concept
The ARDEN distillery produces botanical spirits, fermented tonics, and functional beverages without a single grain and without a single drop of alcohol.
This is not a compromise. It is a category that does not exist anywhere else at this quality level between Gold Coast and Cairns.
The distillery uses native Australian botanicals — lemon myrtle, finger lime, Davidson plum, rosella hibiscus, wattleseed — alongside the community's own fermented ingredients to produce drinks that are genuinely extraordinary and genuinely good for you.
What We Produce
Six Categories of Excellence
Botanical Spirits
Distilled non-alcoholic spirits using native botanicals — complex, aromatic, made for serious drinking without the alcohol.
Kefir
Raw milk kefir from the community's A2 Jersey herd. Live cultures, full fat, genuinely medicinal.
Kombucha
Small-batch, single-origin, seasonal botanicals. Fermented on-site with wild cultures.
Bone Broth
Slow-simmered from the community's grass-fed cattle. Available daily at the market and social clubhouse on tap.
Fermented Vegetables
Cave-aged at earth temperature in the underground fermentation cave. Sauerkraut, kimchi, preserved native fruits.
Raw Honey Mead
Non-alcoholic fermented honey tonic using raw varietal honey from the community's native stingless hives.

The Cave
Beneath the food processing hub, the fermentation cave maintains a constant earth temperature of 14–16°C year-round — no refrigeration, no energy input, no artificial environment.
Stone walls. Amber jars. Darkness and time.
The cave produces the community's aged cheeses, fermented vegetables, cured meats, and long-ferment tonics. It is accessible from a small arched timber door set into a grassy bank — a destination for hotel guests, a daily resource for residents, and a research facility for the ARDEN Lab.
The Tasting Bar
Drink Well
The distillery tasting bar is ARDEN's most public-facing commercial venue — open to hotel guests, day visitors, and residents.
The menu is entirely non-alcoholic. The experience is entirely serious.
A full cocktail list using the distillery's botanical spirits alongside house-made fermented mixers, bone broth flights, and seasonal tasting menus.
The bar faces the community's main working still through a floor-to-ceiling glass wall. You can watch the distillation process while you drink the result.

Beyond ARDEN
